It has been a pleasure getting to know Oksana Boruseviciene, general manager at the Smuggler's Rest in Clogherhead, as part of our #5minuteswith series. Oksana has been a manager in the hospitality business since the tender age of 19, and her favourite #sealouth seafoods are crab claws and scampi.

What is your restaurant’s USP or best feature? Delicious weekly specials. Local fresh seafood, particularly our famous scampi and seafood chowder. Weekly live music events.
Where did you grow up, and how has that shaped you as a manager? I arrived in Ireland when I was 17 years old. I was planning to stay for the summertime and go back to Lithuania to continue my studies. However, here I am in Ireland still more than a decade later! I loved the country and I couldn't wait to learn more about the people and culture.
After deciding to stay in Ireland I got my first manager position when I was only 19 years old. I had a chance to be a part of one of the best cafes, restaurants, and hotels where I formed my management skills.
What are the ingredients you couldn't be without? Clogherhead prawns from Pat Lynch and local seafood supplied by Seamus Dunne.

What sea louth dishes can be found on your menu currently? The Smugglers Rest offers delicious crab cakes, fish, mussels, prawns, scallops, and many more. Additionally, our customers can enjoy different weekly specials to try new seafood dishes.
What is your favourite thing to do/place to go in Louth? I love spending my free time outdoors with my family. Clogherhead beach is one of the nicest in the area.
The Smuggler's Rest is open Wednesday to Sunday – Wed/Thurs from 3pm, Friday from 1pm and Sat/Sun from 10am. With thanks to Oksana for taking time out of her busy schedule to speak with us.
